Directions : Start by preheating your oven to 350 degrees Fahrenheit. Spray Pam to a 9×9 casserole dish. Combine in a separate dish the corn, parmesan cheese and 2 beaten eggs and then pour the mixture into the 9×9 casserole dish and sprinkle it with the crumbled crackers. Place small bits of butter on top and bake 50 to 60 minutes at 350 degrees Fahrenheit. This will make 4 to 6 servings.
Zucchini and Tuna Casserole : The ingredients are 2 cups sliced zucchini, 1 can of drained 12 oz. tuna, I small onion sliced, 1 chopped carrot, 1 chopped celery stalk, 1 can of 10 oz. cream of celery soup, 1 cup of sour cream, 2 tbsp. of margarine, 2 cups of cooked and drained egg noodles, ? dry bread crumbs, ? tsp. of dill and a dash of salt and pepper. Directions : Start by preheating your oven at 350 degrees Fahrenheit, Blanch the zucchini, carrot, celery and onion all together for 10 minutes and set them aside to drain. Greased a 1 q. casserole dish and put the drained vegetables in it. Fold in the egg noodles and the tuna with it then combine in a separate dish the sour cream, dill, salt, pepper and cream of celery soup. After its done pour the mixture over the casserole and sprinkle the top with bread crumbs. Put dots of margarine on top of the casserole and bake it for 30 minutes at 350 degrees Fahrenheit. This will serve 4-6 persons.
